Does the Grand Central Market news ever stop? Nope, and here’s something else: joining newbies, like Brooklyn-bred falafel shop Madcapra and La Tostadería from Fernando Villagomez, chef Ilan Hall has struck a deal to open a new vegan noodle space in the Downtown L.A. food hub.
Having closed his first restaurant The Gorbals, which was set in Downtown L.A.’s Alexandria Hotel, back in December, the chef seems to be leaving his bacon-wrapped matzo ball legacy behind to serve a plant food-based ramen and pho menu. Early word is that dishes will include Khop Ramen with doenjang broth, curry-roasted celeriac, and kimchi along with appetizers like beet buns served with pickles and hoisin sauce. The new spot is being billed as the first all-vegan ramen and pho concept in L.A.
Hall says the menu isn’t just designed for vegan consumption, and he hopes the shop will have a broader appeal. Chef Rahul Khopkar, who ran the kitchen at The Gorbals, will be running this one, too.
There’s no name or exact date for the project yet.
